As a part of Eli’s program, we have worked our way through quite a few nuts and seeds in dosing, which he now eats at varying intervals each week. Once a week, he eats peanut butter, chia seeds, buckwheat, and poppy seeds. Three times a week he eats almonds, and he eats macadamia nuts daily. The ones he is already sensitized to, he eats whole (almonds, peanut butter). However, the rest of the seeds and nuts must be chopped. With the smallest seeds, chia and poppy, I’ve used a coffee grinder to chop them. However, with the macadamia nuts and now with the brazil nuts, I’ve been using crank grater. I thought I’d show you our method for making vegan white chocolate macadamia bites for Eli’s maintenance.
First, I use the crank grater to chop the seed into tiny pieces, like the ones pictured in the bowl.

Next, I set up my assembly line. Every dose must be precise, so it is quite an undertaking. I set out four bowls and I put one tablespoon of vegan white chocolate chips in each, along with a small amount of shortening.

Then, I microwave one bowl at a time for 30 seconds, take the bowl out, and stir in ¼ tsp. Of the macadamia pieces.
Lastly, I transfer it to wax paper on a tray or plate. I do this over and over again- I usually try to make about 30 (a month’s worth) at a time and I plan to add future nuts to this little chocolate as he passes more (brazil nut is his next challenge in August!).
I put them in the freezer to harden up, and I store them there as well, taking out one at a time each day for Eli to eat.
And that is how we do it over here! All in all, each month comes with quite a lot of prep, although the egg yolk is the hardest and most time consuming! I also denature two different milks and measure them into doses or maintenance amounts, but it isn’t super hard! The rest of his foods are just a matter of measurement (I use a syringe to portion sheep’s yogurt!).
The picture below is of my milk denaturing set-up. I can honestly say that I never used a syringe before this program, and now I have a whole box of them and use them to measure everything!
