Eli wasn’t much of a breakfast eater before this program. Now, because of all of the maintenance foods and timing requirements, he eats a fairly large breakfast most mornings.
Every morning he eats maintenance foods (foods he has challenged in the clinic that will condition his body to tolerate his allergens). Right now, I bake his maintenance foods into a muffin. I like to change up the flavors and so far we’ve done plain, banana, and now pumpkin muffins. Baking these is a really interesting process.
First, I make a batch of the normal recipe, sometimes adding a little bit more liquid than I normally do.
Secondly, I get out about six small bowls and measure a quarter cup of the batter into each bowl, and then the exact amount of his maintenance foods. Right now they are 1 tsp. Buckwheat, ¼ tsp. Of ground chia seed, and ¼ tsp. Of ground poppy seed. I mix them up and put them in the muffin tin, then mix up six more. Once they are cooled off, I freeze half and keep the other half in the refrigerator.
In addition to his maintenance muffin, he eats either a pear or apple, a stone fruit, and either 1 tsp. Of sunflower butter or peanut butter. He also drinks half a cup of soy or coconut milk with it!
It is a lot of food!
